I visited my parents last month, and while I was visiting, my family went camping. My mom put me in charge of food for our trip, who knows why because she’s a much better cook than I am. Anyways, I wracked my brain for easy & delicious meal ideas on the grill or campfire. Growing up, we survived on bisquick pancakes, bacon, tin foil dinners, and plops- which was just chocolate pudding mixed in a plastic bag that was served from that plastic bag… and plopped onto the plate. Oh, the good ‘ole days haha!
Anyways, I decided we needed a tin foil dinner, but I wondered if there was an elevated recipe compared to what we used to eat as kids. I found a shrimp boil tin foil packet recipe on Damn Delicious & knew exactly what I wanted. Long story short, my family was skeptical, until we cooked it and ate it. It was super easy, cooked really quickly on the grill, and was really delicious. I adapted this original recipe to have even more cajun flavor and zucchini (because I’m swimming in garden zucchini right now SWIMMING).

I’m all about easy and delicious. What’s easier than a 1 pan (or foil) dinner? There’s really not much to say about this because it’s quick, just takes 10 minutes to throw together and about 15 to cook on the grill. Whether I’m eating this delicious meal camping or at home, I’ve got a few extra minutes to sit and enjoy the bold flavors here. I love having foods that force me to slow down and eat because that allows me to really enjoy what I’m eating and experience it in the moment vs just scarfing it down and moving on. This packet is HOT, you’ve got to be patient while trying to eat. I like to take that time to connect with those I’m eating with and take in all the delicious cajuny smells.

Quick Notes on This Recipe
- Make sure to use frozen shrimp, they will cook perfectly and contribute some liquid to the foil dinners.
- Use whatever vegetables you have on hand. Zucchini is best & easiest, but all veggies can go nearly everywhere!
- Cut potatoes pretty small because they take the longest to cook.
Cajun Shrimp & Vegetable Tin Foil Packets
- 2 ears fresh corn
- 1/2 pound yukon gold potatoes
- 1 medium zucchini
- 2 links andouille sausage
- 1/2 pound frozen shrimp
- 1/2 tablespoon cajun seasoning
- 1 tablespoon extra virgin olive oil
- salt & pepper to taste
- Preheat grill (or oven) Cut 2-4 sheets of tin foil (about 14-16 inches long). Use 1 heavy duty sheet per packet, or 2 if not heavy duty tin foil. Set aside.
- Quarter corn by scoring the cob and breaking it into 4 pieces. Cut potatoes into 6-8 similar sized bites, cut zucchini into bite sized pieces as well.
- Slice andouille sausage with a good serrated knife. Add all ingredients into large mixing bowl. Add frozen shrimp to bowl as well.
- Pour olive oil and sprinkle cajun seasoning over ingredients, mix until well combined.
- Grab tin foil and divide mixture between sheets. Pull up sides and fold over to create a packet. Place packets on grill and cook for 15 minutes. Check doneness of potatoes. Remove when potatoes are tender. Serve immediately.
