Greek Quinoa Salad
- 1 cup quinoa rinsed, then cooked
- 1 whole cucuber quartered
- 1/4 cup red onion sliced
- 1/4 cup mint leaves
- 1 whole lemon juiced
- 1/8 cup extra virgin olive oil
- 1 teaspoon salt
- 4 ounces good feta cheese
- Add all ingredients to bowl, mix together. Season to taste with additional salt & pepper
