This fresh and delightful salad packs lots of nutrients and flavor into this simple dish. Make it for lunch, dinner, a summer BBQ or potluck. What’s even better than the flavor bomb in this salad is how stinking easy it is. Everyone will think it took you hours to perfect, but I already did all that work for you. It just took a trip to a Milk Street recipe development class to start to know what to do with ingredients and flavors. yup

You and your family will love this Greek quinoa salad is as healthy as it is easy, and it's even better for lunch tomorrow.

Servings: 4 servings
Ingredients
  • 1 cup quinoa rinsed, then cooked
  • 1 whole cucuber quartered
  • 1/4 cup red onion sliced
  • 1/4 cup mint leaves
  • 1 whole lemon juiced
  • 1/8 cup extra virgin olive oil
  • 1 teaspoon salt
  • 4 ounces good feta cheese
Instructions
  1. Add all ingredients to bowl, mix together. Season to taste with additional salt & pepper

Recipe Notes

Cook quinoa in chicken or vegetable broth for added flavor
