This 3 ingredient pomegranate marinade for pork is easy, delicious, and packed with a pomegranate nutrition punch.

  • 3 cups POM Wonderful 100% Pomegranate Juice
  • 1/4 cup balsamic vinegar
  • 1 medium shallot diced
  • 1/4 teaspoon salt
  • 2-3 pound pork loin trimmed
  1. Mix together POM Wonderful 100% Pomegranate Juice, balsamic vinegar, diced shallot, and salt. Pour into deep pan or plastic bag to marinate pork in. Place pork in marinade. 

  2. Place in fridge, marinate for at least 4 hours. Turn pork at least once to cover the whole loin in marinade for best results. 

  3. Preheat oven to 350 degrees, place pork loin in deep covered dish. Pour about 1 cup of marinade into dish. Cook for about 60 minutes, or until pork is cooked through, to at least 145 degrees F.  

  4. While pork is cooking, reduce remaining marinade to use as a sauce or dressing. Pour remaining marinade into small pot over medium-high heat on the stove. Stir occasionally with a whisk. Should take about 15 minutes to reduce to a syrup consistency. (bubbles will grow larger and will reduce in volume). Remove from heat once reached. Refrigerate until use. 

  5. Remove pork from oven when cooked to desired doneness. Let rest for at least 20 minutes. Slice pork loin into 1" thick slices, serve over salad or with other sides.
