Ingredients

quinoa
rinsed, then cooked

cucuber
quartered

red onion
sliced

mint leaves

lemon
juiced

extra virgin olive oil

salt

good feta cheese
Instructions
Add all ingredients to bowl, mix together. Season to taste with additional salt & pepper

Cook quinoa in chicken or vegetable broth for added flavor
