Ingredients

  • 1 cup quinoa rinsed, then cooked
  • 1 whole cucuber quartered
  • ¼ cup red onion sliced
  • ¼ cup mint leaves
  • 1 whole lemon juiced
  • cup extra virgin olive oil
  • 1 teaspoon salt
  • 4 ounces good feta cheese

Instructions

  • Add all ingredients to bowl, mix together. Season to taste with additional salt & pepper

Cook quinoa in chicken or vegetable broth for added flavor
