Spring is here (even though it’s totally snowing as I write this) and before we know it, it’ll be Mother’s Day and we’ll be well into summer. How on earth have we gotten to this point?
I’ve been hounding my mom for days to decide on a recipe to post for Mother’s Day. It may be true that I already know what I’m sharing for Father’s Day, and I may not (definitely did not) ask my dad what he would virtually want for Father’s Day. I know he will LOVE what I’m sharing for Father’s Day, because it involves bacon and no other info is needed.
But my mom is another story. She is an incredible cook with incredible taste. I wanted to get it just right. That was my mission for the week. She did decide on peanut butter whole wheat pancakes with banana, raspberries, and pecans. While that sounds delicious, I’m up for all the berries and bananas on my pancakes, I could elevate that just a bit. Without exerting too much effort. I’ve gotta!
And then I realized that caramelized bananas with a hint of cinnamon and pecans would do the trick! Bananas foster pancakes.

Ok, so in case you don’t already know, I love cooking and eating, but multiple steps and complication send me running for the hills. It’s a knee jerk reaction of sorts, I’m running before I can even register what’s happened. So, obviously I need to make something that’s delicious and special, but won’t take all morning or anything.
Mother’s Day is a fun way to spoil someone who has sacrificed everything for you, and it’s fun to experiment a bit in the kitchen to make something delicious that she’ll love and that the whole family will love. These moments together are highly cherished. These moments will be remembered far longer than what was served, but you might as well serve something delicious to keep everyone happy and engaged in the moment, right?!

These bananas foster pancakes are not only a special dish that is fit for your mother, but it’s something that you can throw together (and let the small kids help make) in order to spend more quality time with mom.
Make them with a good pancake mix to save some time and energy. I’ve been loving Kodiak Cakes as well as Bob’s Red Mill whole grain pancake mixes. They’ve got extra fiber and nutrients with the whole grains, and all of the fluffiness of normal freshly made pancakes.
Quick Notes on This Recipe
- Save yourself the time and buy a good box of pancake mix. There are new whole grain mixes that are better than any whole grain mix that I’ve tried to make myself. Plus they’re way easier. I’m a fan of Kodiak Cakes & Bob’s Red Mill pancake mixes.
- Make sure to use ripe enough bananas, green bananas will not soften enough.
- The bananas foster topping is not only delicious on pancakes, but it would be a great cake topping, great on German pancakes, on oatmeal, or even on plain sourdough bread. The opportunities are endless.
- Do not overcook bananas, they’ll turn to mush. Tried it, it gets gross.

Easy Bananas Foster Pancakes
Equipment
- Mixing bowl
- whisk
- Large Skillet/Griddle
- Measuring Cups
- Measuring Spoons
Ingredients
- 1 cup whole grain pancake mix follow mix instructions
- 2 tablespoons butter
- 1.5 tablespoons dark brown sugar
- pinch salt
- 2 ripe bananas sliced
- 1/2 teaspoon cinnamon
- pure maple syrup
- toasted pecans
Instructions
- Prepare and cook pancakes according to mix instructions.
- Heat small saucepan over medium heat. Once hot, add butter and brown sugar to pan. Stir until incorporated and bubbly. Sprinkle with a pinch of salt.
- Add sliced bananas to butter and sugar mixture, lower heat to med-low. Stir occasionally until bananas are softened and coated evenly with butter and sugar mixture, about 3-5 minutes. Add cinnamon after bananas are softened. Stir together
- Top pancakes with bananas and pure maple syrup. Add pecans if desired.
Notes
- Use ripe bananas for this recipe
- Top with toasted pecans
